This Soup is one of the best I have ever made and eaten!!! It is light, delicious and fast and easy to make!
I made this soup last night for a family party. It was a huge success! My pot was empty, and rather quickly (that was a huge compliment). I was thrilled! This soup is definitely in my top 5!
So I need to quickly blog about it, because when I cook I normally just throw in spices here and there. If I wait too long to post the recipe, I would be afraid I would forget what I put in it. Plus I had a few requests for the recipe. Thank you Sterzer's for a fun party and for enjoying my soup as much as I did! Loves!

Creamy Honey Lime Enchiladas
Love. Love. Love. Enchiladas!
Everyone staying cool this summer? Unless you like it hot. I have a friend who loves the heat. She makes me smile because every time it is warm she rejoices.
These enchiladas can be Hot too. Or mild. Your choice. But I like them a bit on the spicy side. My kids surprisingly too, like some spice. Either way, you will rejoice too!

Honey Lime Chicken Fajitas
These taste so fresh. A delight for your mouth!
I have been enjoying Pintrest a lot lately. Love looking at all the ideas, food etc. Makes my creative mind flow and create. Now, having said that...it is wise to only be on for mo longer than 15 minutes or you will be sucked in even further.
So I was thinking about my blog the other day and of course the reason I started this is for my kids. I was thinking more about how I add my own little 2 cents in about what is going on if life and my day. And came to realize, this blog is also like my journal. So, as the years pass and I forget day to day memories, I could always look back and reflect. Better yet, my kids can reflect and remember.
That is what is going on in life at the moment. Also, continuing my projects around the house. And today, I am going to make a cake and dedicate it to my sisters. Why? A few reasons. 1. Both their birthdays are in the month of February (only a day apart). 2. Nutella is going to be part of the cake (my sister's LOVE Nutella). 3. I want to make a cake. Will post this week....so stay tuned.

Chicken Dumpling Soup
The perfect comfort food.
I haven't made chicken and dumplings in a long time. And I am sorry I haven't. WOW what a big hit! I made it for my family and they gobbled it down! Wanting more and more. Then I made it for a party later that week and it seemed to be a hit...well, at least my crockpot was empty at the end of the party. So that is a good sign.
My mom used to make chicken and dumplings all the time growing up. It was one of my favorite dishes. I wanted to make it into a soup...and so I did. My secret ingredient~Pesto. Turns out perfect!
So curl up and serve some chicken and dumpling soup. You won't regret it!

Chicken. Red Potatoes. Broccoli. Tomato Bruschetta.
First addition to Mealtime Menu's.
In my house...when I stare at the wall and think..."What am I going to make for Dinner?" If I have chicken, potatoes and some sort of veggie; it makes a great dinner (I make it a lot, but different versions of it). Fast. Stand-by. Pleases everyone. Versatile. From start to finish...about 45 mintues-1 hour to make this entire meal.
Here is what is on the Menu:
Chicken with glazed BBQ sauce and sauteed onions
Red baby Potatoes, baked with a chili herb blend
Blanched Broccoli with fresh mozzarella cheese
Tomato Basil Bruschetta with Artisan Bread

Raspberry Chipotle BBQ Chicken Drumsticks
This is one of my husbands favorite things....
Eating BBQ Drumsticks. Not Grilling. In fact, I am the one who does ALL the grilling. I think out of the 7 years that we have had our grill, my husband has grilled 2 times on it. Not to say that he isn't good. Just I LOVE IT!
I walk through a Home improvement store and see the grills and I am the one drooling. Yes, the grill has a special place in my heart.
What not better to do than grill in the summer? I mean, come on...who doesn't love the smell of food cooking on the grill?!
There are a few tricks to grilling. 1st. You need to know your grill and it's "hot spots". More on that later.
Drumsticks are CHEAP. And on the grill they are amazing! This recipe is simple. Simple. Simple.
Simple and Cheap, what better than that? Oh yeah, they taste good...the perfect trio.

Chicken Verde Tostadas
Like Mexican Food?
There is something about the Salsa, that just makes me want to Salsa. This one has green salsa. My husband's favorite. Maybe he will want to Salsa with me (since he likes it so much too)!
Mexican Food has such amazing flavors! It is a Fiesta for your mouth!!! I love all types of food, but I have to say...Mexican Food is close to the top of the list. I mean, come on...how can you not love it with words like: Fiesta, Salsa, Hola, Verde and Tamales. Like I said, it makes you want to Salsa. Even if you don't know how....just pretend you do.

Chicken Bruschetta Sandwich
Dine this. It is super tasty! I took a few of my favorite things and put them together and thus the Chicken Bruschetta Sandwich was created.
It is the perfect ladies luncheon sandwich. Mmmmm.
