Chicken. Red Potatoes. Broccoli. Tomato Bruschetta.

First addition to Mealtime Menu's.


In my house...when I stare at the wall and think..."What am I going to make for Dinner?" If I have chicken, potatoes and some sort of veggie; it makes a great dinner (I make it a lot, but different versions of it). Fast. Stand-by. Pleases everyone. Versatile. From start to finish...about 45 mintues-1 hour to make this entire meal.

Here is what is on the Menu:

Chicken with glazed BBQ sauce and sauteed onions
Red baby Potatoes, baked with a chili herb blend
Blanched Broccoli with fresh mozzarella cheese
Tomato Basil Bruschetta with Artisan Bread


*Before I get to the Menu...best way to make this Menu and balance your time is 1st: Potatoes and let them cook while you make the rest. 2nd: Tomato Bruschetta and throw the bread in the oven to warm with the potatoes for the last 8 minutes of cooking. 3rd: Chicken. 4th: Broccoli.
Chicken:

3-5 large chicken breast, sliced
1 medium yellow onion, sliced
Salt and Pepper to season and taste
1 1/2 tsp garlic powder
1 Tb dried cilantro
3 Tb BBQ sauce
2 Tb yellow mustard

Slice chicken into large slices (about 4 slices per chicken breast). In large saucepan, cook sliced chicken in 2 Tb olive oil until 75% cooked (season with salt and pepper). Add garlic, onion, cilantro, BBQ sauce and mustard and finish cooking, you can also add a little water if the pan is too dry. When chicken is done and onions are light browned, cover and let rest for a few minutes. Serve warm.

Potatoes:

About 30 small baby red potatoes, quartered with skin still on

Herb mixture:

2 Tb chili powder
1 Tb onion powder
2 tsp garlic powder
1 Tb dried oregano
2 tsp lemon herb seasoning

Mix herb seasoning in small bowl. Place potatoes on large cookie sheet with edges. Drizzle olive oil over potatoes (not too much, just enough to coat). Sprinkle herb mixture over potatoes and mix evenly all over potatoes. Cook in 450 degree oven for 30-40 minutes or until your liking I like my potatoes a little crunchy and browned. I make potatoes like this ALL the time...I slice them different and put different seasoning on the potatoes to change it up.

Poached Broccoli:

Bring pot of water to boil. Add broccoli and cook for about 2-4 minutes. Not long. You want the broccoli to be a vibrant green color and still have some crunch in it. Remove from stove. Drain. Add cheese of your choice and cover until ready to serve. *Cooking broccoli is really good for you. It brings some of the nutrients out of the broccoli and it isn't as tough to eat. BUT don't over cook your broccoli and loose ALL of the nutrients.
