Chicken Verde Tostadas

Like Mexican Food?


There is something about the Salsa, that just makes me want to Salsa. This one has green salsa. My husband's favorite. Maybe he will want to Salsa with me (since he likes it so much too)!


Mexican Food has such amazing flavors! It is a Fiesta for your mouth!!! I love all types of food, but I have to say...Mexican Food is close to the top of the list. I mean, come on...how can you not love it with words like: Fiesta, Salsa, Hola, Verde and Tamales. Like I said, it makes you want to Salsa. Even if you don't know how....just pretend you do.


Recipe:

6 corn or flour tortillas (or you can buy pre-made tostadas in the store)
Shredded pepper jack cheese
3-4 large chicken breasts, shredded

Green Salsa:


1 poblano pepper
2 tomatillos or small yellow peppers
1 jalapeno
1/2 large yellow or white onion
3-4 garlic cloves
1/2 bunch cilantro
1/2 tsp cumin (you can add up to 1 tsp of cumin, if you like)
Juice of 1 lime

*If you don't want to make your own salsa, or don't have the time. Buy a can/jar of green salsa in the store. Just add some fresh cliantro and lime, when you cook with it in this recipe.

Garnish with:

Shredded lettuce
Chopped tomatoes
Sour Cream
Guacamole

First. Cook your chicken, season with salt and pepper. Set aside, leave it in pan (you will cook it again). Once cooled, shred.

Second or Meanwhile (your chicken is cooking). Preheat your oven to 400 degrees. Place tortillas on cookie sheet and sprinkle cheese on top. Bake until golden brown, 8-10 minutes. Remove from oven and set aside.


Third. Make salsa. Chop all your salsa ingredients in chunks and place in food processor. Blend ingredients until pureed. *If you don't want it too spicy, don't add any seeds from your jalapenos. The seeds make it hot.



Fourth. Add your green salsa to your chicken in the pan and cook for 5 minutes or until most of the liquid from the salsa has evaporated. *If you want to do this ahead of time, for example...put the raw chicken and salsa in a crock pot and cook for 4 hours. The favor will blend more. Your choice. I would have cooked the chicken in the crock pot, although I wasn't sure what I was making at the moment and needed to make things a little faster. So, there you go.


Fifth. Assemble. After you have cooked your chicken verde, spoon some of the chicken over your tortillas. Add your garnishes. *Also squeeze some fresh lime on top, after you are done assembling.
