Turkey Greek Pita with Cucumber Yogurt

I LOVE these. Love it. Love it. The flavor. The taste. The freshness.

Well, happy 11.11.11 Everyone. If you are one of the lucky ones to get married or have a baby on this date or better yet, to get married at 11:11am...that is awesome! Or even if you shouted a WOO HOO at 11:11...that is awesome too.

Well, even though Fall/Winter is upon us, that doesn't mean that we can't eat Fresh Food. These pita wraps are in my opinion...Fantastic! Got the idea from a cookbook, but tweaked and made it my own. Added my own arrangement of spices. My husband took one bite and said "This is really good". Well, thank you.

And not hard to make at all. Gotta love that!

Ingredients:

1 lb ground turkey meat
1 1/2 tsp ground coriander
1  tsp gram marsala
2 Tb lemon juice
1/2 bunch cilantro, chopped
salt and pepper to taste
Pita's (I used wheat)

Yogurt sauce:

1 1/2 cups greek yogurt
1/2 English cucumber, chopped into small pieces
salt and pepper to taste
1 tsp ground cumin
1/2 bunch cilantro, chopped
1/2 small white onion, finely chopped or 4 green onions chopped

To make:

Cook your ground turkey meat in saucepan until almost done. Add gram marsala, coriander, salt and pepper and cook until meat is fully cooked. Add lemon juice and cilantro and cook 1-2 minutes longer.

Meanwhile make your yogurt sauce and warm your pita's on a skillet to lightly brown and soften. To make yogurt, add all ingredients together and mix well.

To assemble:

Add meat mixture. Yogurt sauce and fresh sliced tomatoes. Enjoy! Makes about 6-8 pita's.
