Strawberry Grape Blue Cheese Salad

What a name. What a taste. For me this salad is like candy. So good, you don't even need dressing.


Frustrated. Beyond. Construction. Grrrrr. Had to complain. I understand why they need to fix the roads...but this is the 3rd year in  a row they have fixed this particular one. Grrrr. And construction is EVERYWHERE! You can't take another road, because construction is happening there TOO. Ok, I am done. 

Blogging. Been busy. 

This salad I love. Let me tell you why. Blue Cheese. Yes. Caramelized Nuts. Yes. Fruit. Yes. All in a salad. Yes, yes yes! Love it all. And if you don't like blue cheese, use Feta or Mozzarella instead. 



Ingredients:


1 large head romaine lettuce, chopped or torn
1-2 cups baby spinach
1 English cucumber, quartered
1 pint strawberries, halfed
small bunch grapes, halfed
1/2 cup blue cheese (or more if you like it strong)
1-2 cups caramelized nuts, pecans or almonds.
Red or Orange bell pepper, chopped
6 green onions, chopped
Creamy poppyseed dressing 


First caramelize nuts. In saucepan with 2 Tb canola oil and 1/4 cup sugar, cook coarsely chopped nuts on medium heat, stirring occasionally to frequently until sugar dissolves and nuts browned. Remove from heat and let sit and cool.

In large bowl add lettuce, spinach and rest of ingredients. Top with cheese and nuts last. 


*ONLY stir the very top of the lettuce with the toppings, so everything doesn't fall to the bottom. I guarantee. Everyone will have even lettuce and toppings. Works best. Taste best. Looks best. 


Serve with Poppyseed dressing (optional). Enjoy!
