Mexican Caviar

Sweet. Spice. Everything Nice. That is what this Mexican Cavi"Arrrr" tastes like.


I made this for Card Club one month. Love Card Club. Love the ladies. Love having recipe exchanges. Love. Love. Love.

This recipe I actually got from my sister in law...although I added a few things. Spice. Isn't it nice? Ooooh I am really enjoying this rhyming. Let's see what else rhymes with spice, nice (twice, slice...). On and on and on I go, where will I stop...does anyone know? HA. Thanks. That was fun.


I think I am in a goofy rhyming/storytelling mood today. So maybe this recipe will tell a story. AH HA...ZU-TI-LOW, that is IT!

Let us set our sails for Story Time...


Ingredients First.

2 cups sugar (I know, it is a lot...it is the marinade. That is where the sweet comes in. It is a treat. There goes my rhyming again.)
2 cups distilled vinegar
1 cup canola oil
2 cups frozen corn
2 cans black beans, drained and rinsed
2 cans black eyed peas, drained and rinsed
2 red pepper, (1 chopped)
1 bunch green onions
1 cup celery
1 bunch fresh cilantro
1-2 jalapenos
Fresh lime juice
Tortilla Chips

So let us begin with our story....

Ahoy!

Once upon a time, there were 3 friends. Mr. Black Bean, Mr. Black Eyed Pea (Arrrr, he had an eye patch and everything), And Miss Corn. They set off on an adventure in a huge bowl (or ship), for what reason, they were not sure...they wanted to find treasure. That was the goal. But what they did not know is that they were going to make one tasty Cavi"Arrrrr".


Meanwhile, the sugar and vinegar joined together in a saucepan. They were plotting to crash the party of the 3 friends. They got heated in the saucepan until the sugar dissolved and they became one. They called themselves...the marinade pirate gang.

However, usually with a gang you have more than 2 people, so the captain (the sugar) invited the canola oil to join in on the fun. 

They snuck up on the 3 friends and took over their boat. The 3 friends were swimming in the deep bowl, surrounded by the pirate gang. Luckily, they were good swimmers.


Now, in a food processor, the red pepper, green onions, celery, 1/2 bunch cilantro, and jalapenos; got pulsed into a "Fine Mixture". They felt heroic, and wanted to save the 3 friends.



Well, the "Fine Mixture" got close to the bowl and the gang pulled them right in. The mixture got scared because the gang was SO strong (they had very sharp swords)...there was just no match in strength.


This adventure was now covered with plastic wrap or tight lid. No one was going ANYWHERE! And into the frig they all went to sit and work out their differences overnight. Stay tuned to find out what happens the next day...(or if you don't have a day, at least let them duke it out for 3-5 hours. If you want to make it all in one day).


The next day, after they were uncovered...the 3 friends planned to get rid of the gang once and for all. The gang was strained. Down, down, down the sink they went. They were no longer a part of the mix. However, some of the "Fine mixture" stayed behind. That is ok, they were the good guys.

By now, the journey is almost at an end. 1/2 bunch chopped fresh cilantro joined. Along with another chopped red pepper and fresh lime from 2 limes.

They made a final voyage to a smaller bowl (smaller ship) on an island, where they met some tortilla chips. The tortilla chips led them to a giant X. They knew they found treasure, because they tasted SO good. They were indeed rich!
