Pesto Pasta with Sauteed Veggies

This one is not rocket science.


In fact, it was a quick meal at our house.

Sauteed Veggies make anything taste good. Really good.

To Make:

Whole Wheat pasta, cooked.

Veggies:
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 medium onion, chopped
3-4 garlic cloves, minced
1-2 cups mushrooms, halved
2 cups broccoli
salt and pepper

Fresh Pesto ( I love Costco Pesto)

Saute the bell peppers, onion, garlic and mushrooms in frying pan in 2 Tb olive oil. Add salt and pepper to taste. *Also, the salt helps to bring out the juices in the veggies...and the flavor!


Cook until all veggies are golden brown.

Meanwhile, cook pasta in salted boiling water. About 2-3 minutes before the pasta is done, add chopped broccoli. Cook for about 2-3 minutes at a boil. Remove from heat and drain.


Add pesto to your pasta (however much you like). Add your veggies on top and garnish with Parmesan cheese.
