Perfect Pancakes

WAKE ME UP! It is morning already? It is time to eat.


I always eat a HUGE breakfast. And these pancakes...I load up! I will eat about 6. Oh num num!!!!

Yes, I ate all of these...and then some.

I make these at least once a week. I don't buy much cereal. It doesn't have much "much-ness". Now, these pancakes have "muchness"...what movie is that from?

And they have Sprinkles!!! At least, that is what you should tell your kids. Yes, they have carrots, squash and apple in them. I PROMISE you can't taste it. Promise. You can't really see the sprinkes either. And who says you shouldn't have veggies with every meal?

"Sprinkles"
I have taste tested these pancakes on a few neighborhood kids. They have NO clue. And better yet, they LOVE them! No joke.

I have put a lot of things in my pancakes. I love to try new things. But with "sprinkles"....these pancakes are by far my favorite! I am tellin' ya, you have got to try these. And when you do, tell me what you think.

You will be addicted like me. 



 Ingredients:

1 large apple or 2 small apples, finely grated
1 yellow squash, finely grated. You can use zucchini too (but you can see it more than the yellow squash)
1 1/2 large carrots, finely grated.
3 1/2 cups whole wheat flour
4 Tb canola oil
3 Tb baking powder
1 tsp salt
2 tsp cinnamon
2-3 Tb Blue Agave* or 4 Tb brown sugar
3/4 cup quick oats
1/2 cup cornmeal
1/4 cup ground flaxseed
3 eggs
1 cup buttermilk (or use regular milk, if you don't have any buttermilk)
Milk, enough to make good consistency.

If you don't have some of these ingredients, don't worry about adding it. Play. Test it out. Have fun. But don't forget to add your sprinkles ;)

To make:

Preheat your skillet.

Get a very large bowl. You are going to add your ingredients in the same order they are listed. Grate your veggies and apple in the bottom of bowl. AKA...sprinkles. Then dump the rest of your ingredients in the bowl, as listed.


Add enough milk to make a good consistency. Mix.

*Blue Agave is a wholesome sweetener. It is low glycemic. It is extracted from the heart of the agave plant. It is slowly absorbed into the body, preventing spikes in blood sugar. It is 25% sweeter than sugar, so you need less.

*The quick oats will absorb your liquid. Make sure you use quick oats. They are smaller than regular oats, they mix better in these pancakes. So, you might need to add more milk if needed after awhile because of the oats absorbing the liquid.

After you mix all the ingredients with an electric mixer. Cook your pancakes on a skillet. Check for bubbles and if it is cooking around the edges. It is ready to flip.


This recipe makes a large batch. I like to make it all, then heat up leftover pancakes the next day in the toaster. Oh num num.

These are so yummy! I can't wait to make them with the carrots, squash and apples in them. I would love some ideas on syrups (healthy) :)

Thanks everyone! I love all the sweet comments :) You make it even more fun for me to do! I am blushing.

I will for sure have to do some healthy syrups. The fresh strawberry puree, that we did in cooking class is a good one. Not a lot of added sugar.

Made these for breakfast. So YUMMY! I like thinner pancakes, so I almost tripled the buttermilk. I love sneaking veggies into breakfast like this. We ate them with coconut syrup, and they were fabulous. I already can't wait to make them again.
