Rocky Road Cookies

So I was craving something sweet...this is what I came up with...


Eat them up! Don't forget your glass of milk.


Chocolate, Mallows, Nuts...what's not to love? The "yummy bits", yes they are yummy! Oh so yummy.


The problem is if you show too much love and eat them all. Well, then again...that's not really a problem.

Recipe:

2/3 cup all purpose flour
2/3 cup wheat flour (yes, I do put wheat in just about everything)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter softened, (or if you don't want as much butter: add 1/4 cup butter and 1/3 cup canola oil. That is what I did.)
1/3 cup granulated sugar
1/3 cup brown sugar
1/2 tsp cinnamon
1 large egg
1 tsp vanilla
2/3 cup chocolate chips
2/3 cup nuts (pecans, almonds, walnuts...whatever you want, or you could omit the nuts: in that case, add 1 cup chocolate chips and 1 cup mini mallows)
2/3 cup mini mallows

Preheat oven to 350 degrees.

In large bowl, cream butter and sugar first. Then Add egg and vanilla. Then add your dry ingredients.  Mix well with electric mixer.


If your cookie dough looks too dry...add 1-2 Tbs oil, so it pulls together.

Too Dry
Add your yummy bits: chocolate chips, mallows, nuts. Mix well.


Spoon cookie dough on cookie sheet.



Cook 9-10 minutes. Until slightly browned on edges, but still soft in center.


Remove. Let cool for 5-10 minutes. With spatula, remove cookies and finish cooling on wire rack....if you can wait that long.


Repeat with the rest of your dough. Makes about 2 1/2 -3 dozen cookies.

Enjoy the "yummy bits" in your rocky road cookies! Good luck not eating more than one.

These look so yummy....I may have to try them. I am afraid I might just eat them all though...

Yummy! I LOVE that you put wheat flour in everything! I can't wait to make these...I might just have to make some for the bake sale!
