Green Salad with Slaw and Egg

This is a refreshing salad. And a great way to use leftovers!


So these past few weeks have been very busy around my house. We had the blessing of having my Mom visit us! We all had lots of fun and kept Very Busy!

I think I will keep this post short.

Salad:

Toss of Baby Spinach and Romaine Lettuce
Sliced Tomatoes
Chopped Yellow Bell Peppers
Quartered English Cucumber
Southwestern Slaw 
Hard Boiled Egg, sliced
Fresh Cracked Pepper to taste

The directions are simple. Do as the picture looks....


The nice thing about this is when you make you Southwestern Slaw the day before you can have this Salad as leftovers the next day. Enjoy!

*Best way to make Hard Boiled Eggs: In large pot, fill about half way with cold water (enough to cover egg). Add about 1-2 tsp salt, add eggs (however many you want to cook). Turn the stovetop to high and just as it starts to boil, turn down immediately to low. Cover and let cook for 17 minutes. Remove and drain hot water immediately and cover eggs with cold water (you can add ice if you want). It makes the perfect boiled egg.
