Baked Broccoli and Cauliflower

You can eat TONS of this and not feel guilty. It is not difficult. It is healthy. It is a great side dish.

To make:

2 bunches of broccoli
1 head of cauliflower
3-4 Tbs Olive Oil
Fresh Rosemary, smashed and chopped. Smashing the fresh herbs before you cut them, helps to bring out the flavor better. *You can also do this with dried herbs. Smash=hit it with spoon or side of knife.
4 cloves garlic, crushed
1 Tb dried Italian seasoning
1/4 cup Parmesan cheese (optional)

Wash. Rinse Broccoli and Cauliflower. Cut into big chunks. Place on towel to absorb most liquid. Place in large bowl and toss with olive oil, about 3-4 Tbs. Then add your seasonings. Rosemary. Garlic. Herbs and Cheese. Let those herbs blend. Let them marry.

Place on Cookie Sheet. Bake at 400 degrees until light browned. About 10-16 minutes. Turn once, half way through.

*A key to cooking...when you start to smell, it is usually done.
