Chicken Bruschetta Sandwich

Dine this. It is super tasty! I took a few of my favorite things and put them together and thus the Chicken Bruschetta Sandwich was created.


It is the perfect ladies luncheon sandwich. Mmmmm. 

Ingredients:


Italian Bread or French Bread
3 Large Chicken Breasts (makes about 4 servings)
Fresh Mozzarella Cheese, sliced
Fresh Pesto
Fresh Salsa (Pico Di Gallo, or Fresh Chunky Salsa)
Mayo
Shredded Lettuce or Spinach
Salt and Pepper to taste

This is the Pesto and Salsa I like:

I LOVE Costco. That is where I get my Pesto and Jack's Salsa.
To Make:

Slice your French Bread and brush with Olive Oil. Place on cookie sheet and bake in oven at 375 degrees until lightly browned on both sides. About 8-10 minutes per side. It should be slightly crunchy. Remove from oven and let cool. How many slices of French Bread to cut is up to you. How many sandwiches are you making?

Meanwhile, cook your chicken in a skillet with 3 Tbs of oil. Cook that Chicken. Never knew anyone who liked raw chicken. Add Salt and Pepper to taste. Brown on both sides. Remove and let rest for a few minutes. Letting the meat rest, helps the juices suck back into the meat while it is chillin' (like a straw...slirp).  Rest is a good thing.

Then, slice chicken into strips. Put some sliced mozzarella on top of the chicken while it is still warm. Set aside.


To assemble:

*Assemble it right before you eat it.

Take one slice of bread and place the cheesy chicken on the bread. We are now making the sandwich. YUM. Add a spoonful or so of Pesto to the chicken. Then add your salsa on top (avoid adding a lot of liquid with your salsa to your sandwich). I am telling ya, it tastes divine! Lettuce. Mayo on top of French Bread. Smoosh like a sandwich.


Eat it. You don't want it to sit too long, because the juices from the salsa etc might make your bread soggy. Try it and tell me what you think. How did I do?
