Kid's Kitchen: Summer Foods

Lesson 4: Summer Foods


1. Homemade NO-Churn Ice Cream. 2.Fruit Salad. 3.Homemade Brownies





1. No-Churn Homemade Vanilla Ice Cream:



1 can sweetened condensed milk
2 cups heavy whipping cream
1 tsp vanilla
½ cup powdered sugar
In bowl, whip heavy whipping cream, powdered sugar and vanilla until stiff peaks form. Slowly fold in sweetened condensed milk.
Freeze until set for at least 4 hours. You can freeze in bowl and scoop out or freeze in popsicle form.
*For different flavor popsicles. Add cooled melted baking chocolate or pureed strawberry or blueberry’s. In popsicle mold add some ice cream mixture, then berries, then ice cream…back and forth etc. until mold is filled.

Warm Strawberry or Blueberry Sauce

2 cups berries (if using strawberries, chop)
¼ cup sugar
1 tsp lemon juice
In saucepan over medium heat, add berries (of your choice) and sugar. Cook until bubbly. Remove from heat and stir in lemon juice. Serve warm berry sauce over ice cream!

2. Summer Fruit Salad:



Mixed Fruit: Watermelon, Honeydew, Cantaloupe, Plums, Peaches, Kiwi, Strawberries, Blueberries, Apples, Oranges etc. (whatever combination you like); chopped

Dressing:

¼ cup fresh lime juice
¼ cup honey
1 tsp grated orange zest
1 tsp grated lime zest
1/2 tsp ginger
Pinch of salt
Fresh Mint, chopped (optional)
Mix all dressing ingredients in small bowl.
In a large bowl, add chopped fruit. Add dressing and stir in fruit. Serve and enjoy. Refrigerate extras. 

3. Homemade Chocolate Brownies:



½ cup butter
3 oz unsweetened chocolate, finely chopped
1 cup sugar
Pinch of salt
2 large eggs
1 tsp vanilla
2 tsp baking powder
¾ cup flour

¾ cup chocolate chips, peanut butter chips, or white chocolate chips (optional)
Preheat oven to 350 degrees. Lightly grease 8 inch square dish or pan.
In saucepan, over medium-low heat, combine butter (chop into pieces), chopped 3 oz chocolate. Heat, stirring often, until melted; about 4 minutes. Remove from heat and stir in sugar and salt. Add eggs and vanilla and stir until blended. Sprinkle flour and baking powder and stir just until blended. Stir in chips, if using.
Pour batter in prepared dish and spread evenly. Bake the brownies about 30 minutes. Do not overbake. Cool and cut into squares. Enjoy!
