Kid's Kitchen: Pumpkin

Lesson 15: Pumpkin


1. Pumpkin Cake with Pumpkin Cream Cheese Frosting
2. Pumpkin Chocolate Chip Cookies
3. Pumpkin Pretzels with Cinnamon & Sugar Topping


Pumpkin Cake:


Ingredients:

4 eggs
1 2/3 cup sugar
3/4 cup canola oil
15 oz pumpkin puree
2 cups flour (I used a white whole wheat flour)
2 tsp baking powder
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground cloves
1 tsp salt
1 tsp baking soda

Frosting:

8 oz cream cheese, soften
1/2 cup butter, soften
3-4 cups powdered sugar
1 tsp vanilla 
1/2 tsp cinnamon


To make cake: Preheat oven to 350 degrees. Grease 10x13 jellyroll pan set aside.

Combine sugar, eggs, oil and pumpkin in large bowl and mix with electric mixer until smooth. Add dry ingredients (rest of ingredients) and mix until combined. Don't overmix. 

Pour into pan and bake in oven for 20 minutes or until toothpick comes out clean. 

Cool. 

While cake is cooling, make the frosting. With electric mixer, mix the cream cheese and butter until creamy. Then add the rest of the ingredients and mix until creamy. 

Spread on cooled cake. Slice and Enjoy! 

Pumpkin Chocolate Chip Cookies:


Ingredients:

1/2 cup butter, soften
1/2 cup coconut oil
3/4 cup sugar (or Agave, that is what I used)
2/4 cup brown sugar
1 egg
1 tsp vanilla
2 cups flour (I used a white whole wheat flour)
1 cup quick oats
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp ground nutmeg
1/8 tsp ground cloves & ginger
1 cup pumpkin puree
1-1 1/2 cups chocolate chips


Preheat oven to 350 degrees. 

Mix butter, oil, and sugar in large bowl until creamy. Add rest of ingredients (except chocolate chips) and mix well. Add chocolate chips and mix. 

Scoop out onto cookie sheet and cook for 12-14 minutes. Enjoy!

Pumpkin Pretzels:


Ingredients:

1 1/4 cup water
2 Tb yeast
3/4 cup powdered sugar
1 Tb butter melted
2 Tb canola oil
1/4 cup pumpkin puree
1/2 tsp cinnamon
5 cups flour (I used 4 cups white and 1 cup wheat. I added 3 cups white, 1 cup wheat then the rest white)
1 tsp salt


Preheat oven to 425 degrees. 

In glass measuring cup, add water (cold) and microwave for 1 minute 10 seconds. Add to large bowl with yeast. Then add sugar, butter and oil. Mix. Add pumpkin and cinnamon. Then add 2 cups flour. Mix well. Add salt now and mix. Add rest of flour until dough is slightly sticky. 

Flour surface and roll out dough and make into pretzel shape. OR you could cut little pieces of dough (to make Pretzel Bites). After dough is ready, dip into warm baking soda bath. This will give the pretzels their dark color. Take warm water (just like you did for the dough) and add 2 Tb of baking powder. Mix until combined. Dip dough into bath and sprinkle (or roll if bites) into cinnamon and sugar mixture. 

Cook for 10 minutes in oven. Cool and Enjoy! *Note: You don't need to take time to let rise. As you are working, it will puff and rise a little and more in the oven. :)
