Grilled Thai Chicken & Veggie Kabobs

Perfect Dish for a Warm Summer Day. 




Whether you like just veggies, or Sausage, Shrimp or Meat; these Kabobs are Versatile and Easy to make. They also please everyone! 


Grilling makes it taste even better! 


So, turn on your grill, so you don't heat up your house and make some Kabobs for dinner! You won't be disappointed!

Ingredients:


All sorts of veggies, largely chopped. 
Mushrooms, Bell Peppers, Zucchini, Squash, Eggplant, Onions, etc. 
*If you use Potatoes, you need to boil the potatoes, till they are slightly underdone. If you grill potatoes with other veggies, the veggies will be overcooked and the potatoes still crunchy. When you boil the potatoes, you want them to still be firm enough to get on the skewers. 
Meat of your choice. I used chicken sausage.
Metal or Wooden Skewers. **If they are wooden, they need to be soaked for at least an hour before using, so they don't burn on the grill. I like the metal ones, so I can wash them after and reuse. 
Thai Seasoning. This is what I used. But I only paid about $3 in the store. No way, $30...that is nuts! I really like this Thai Seasoning though. Taste and Smells just like Thai food. YUM! OR you can use any seasoning blend you like. Or even just fresh garlic and Rosemary. 
Optional: Fresh lime to squeeze over kabobs after cooked. 
Melted Coconut Oil


Chop veggies and meat. And Skewer! Have fun, let the kids help you. Make it just veggies. It is up to you. *Mushrooms are good to put on the ends because the hold firm and don't slide off when you are grilling. Bell peppers fall off easily. 




After you skewer brush with Coconut Oil and sprinkle generously with seasoning. On BOTH sides. 




Now you are ready for the Grill. Cook on Medium heat and LEAVE THE LID TO YOUR GRILL OPEN. It doesn't need to cook fast, it will burn if you don't watch it or if you ignore it. Turn after about 3-5 minutes. Once meat looks done, Kabobs are done. 




Remove and Enjoy! And please don't have a sword fight with the skewers. ;) He he. At least that is what I had to tell my kids.
