Soft. Easy. Fast. Homemade Caramel

This tastes SO good. And it is ALL made from scratch. 


Once you know this recipe, it is faster and easier than taking off wrappers of each individual caramel. It tastes better too. You can use it in all sorts of "Sweet Treat" recipes or just eat it by itself. I am telling you...you will get hooked! 

And guess what? No thermometers. No stirring constantly. It is all made in the microwave in less than 8 MINUTES! Yep. 

Whether you want to add nuts to the Caramel. Wrap it in wax paper and give it as a gift to a friend. Or add it in some Brownies. Your choice. 

Here is the recipe:

Ingredients:

1/2 cup butter, no substitutes
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup sweetened condensed milk
1/2 cup white corn syrup
1 tsp pure vanilla

Now if that isn't easy enough to remember too?...it all has 1/2 cup each of everything! *Now, don't try to double this recipe. It doesn't turn out as good. 

In large glass bowl, first melt butter in microwave for 1 minute. Then add the rest of ingredients, except vanilla and stir.



Cook in microwave on high for 7 minutes. *Note, it will bubble and rise, so make sure your glass bowl is at least double in size of your caramel mixture. 


After cooked for 7 minutes, remove **It will be VERY HOT! Be careful when removing! Let cool for about a minute or so and then stir in vanilla. 

You can now add chopped nuts if desired or add to another dish or pour in glass pan and let cool completely. 


To store: once it has cooled completely, cover until ready to use. You can leave the caramel out at room temperature. Once ready to eat, cut and roll in wax paper. It will be soft. If you want it harder, you could put it in the refrigerator. Enjoy!

  1. I love love love this recipe! Every time I looked for a caramel recipe I needed to boil it and I don't have a candy thermometer so I was ecstatic to find this recipe! I have made it many many times now and have a couple comments. I made it for my mom recently and instead of using vanilla, I used rum flavor and chopped pecans. She loved it!! But I have to say that the changes I made yesterday have been my best yet! I used low fat sweetened condensed milk, added an extra Tbsp of brown sugar and cut the time to 6:40. Idk why but the cut 20 seconds really made the difference. I then added the vanilla and some chopped walnuts and it is gone (all by me) in less than 24 hours! Thanks a bunch :)

  2. Stephanie, That is Fantastic! I am so glad you like the recipe and thanks for the changes. I too love to change it up, always adding... tweaking etc. I like nuts in my caramel too, but I wanted to put the basic recipe down and have the creative of others add to it (like yourself). Thanks!
