Raw Layered Date Bar

Ok. Let's be serious now. This is one of my FAVORITE desserts. Hands down-top 5!!!


This dessert is RAW. This dessert is HEALTHY. This dessert has great protein for after workouts. This dessert will satisfy your sweet tooth and not make you feel or say..."Oh why did I eat that?" This dessert is filled with GOODNESS. Period. Point. Blank. Good. Ness. Even my kids love this one!! And let's just say, if I haven't convinced you enough already...this pan is gone within 2 days. Yep. I am actually surprised it lasts that long. But it is rich and satisfying, so one slice will keep you happy for at least 2 hours or so. Oh and this dessert is VEGAN. Yep, Vegan can taste soooo good!

Once I open a restaurant, I will serve this for sure!

Aloha Salad with Ginger Lemon Dressing

This one is for my friends. You know who you are!!


So I have a passion for leafy greens. I love them. They make me happy. This salad is happy. It is worth a party in your mouth or in the very least a dance!

There is something exciting for me about making salads. Yes, this is true. I love the challenge of finding a new salad recipe to make. Thinking outside the box when it comes to combining colors, textures and flavors together. In the end...celebration!!  

In the past year I have enjoyed experimenting with dressings. Homemade, fresh and full of flavor! So I truly hope you enjoy this one...it's a tangy kinda sweet pop in your mouth. 


My rule to making salads: When making salads, add lettuces first, then add dressing. Mix dressing with lettuces. Then add toppings and ONLY mix the top layer of lettuce with the toppings. If you mix and toss the entire salad and the good "Yummies" fall to the bottom, then you don't get the right balance on your plate. And yes, everyone will get "Yummies" with their salad as they serve themselves if you don't toss it all together in the beginning. The toppings naturally fall to the bottom of the bowl. To do this, I take the knife that I am chopping with and stick it in the salad and lift the lettuce up so that it creates air pockets for the toppings to fall into without all of it falling through. I do that a few times. This will also naturally mix the top layer of lettuces with the "Yummies". 

So lesson for today: Salad is Exciting, A Mixture of Colors, Textures and Flavors, Deliciousness that makes your taste buds dance and A Science (not a true science, because I never measure things). And FUN!! Love your Salad and Trust me, it will Love you back!!!

Power Bars: Loaded with Protein & Fiber

I eat these A LOT! They satisfy my taste buds and sweet tooth. They give me power. They are loaded with tons of protein and fiber. Therefore, I build my muscle and eat less throughout the day because I am full with all the fiber it gives. PLUS...They are Super Good for you! I snack on them all day.


So here you go...I gave you my intro on my these Power Bars Rock! They are Created my Me. Yes, you could call them "Nicole's Power Bars". 

And did I mention: THEY ARE VEGAN!!! SweeeeeT! Can you tell I am excited about them? 

Honestly, my body can't take a lot of sugar, so when it comes to making those sweet treats on my blog, I really don't eat them. I mean, of course I taste and try and make sure they are super delicious, but I can't eat a lot of it. That is why I love these power bars, they have some dark chocolate in them that satisfies my sweet tooth. 

I go and swim laps in the morning and before I go I eat a couple spoonfuls of my power bar. It wakes me up and gives me strength. Then I come home and eat more. After that, I am on my way to aerobics. I enjoy working out. I love the way it makes me feel. Feel the burn! Oh ya! Then I come home and eat a Chobani Yogurt, Lemon is my favorite. Which is also packed with protein! 30% of your daily protein intake in fact. Then I eat lots of fruit and veggies throughout the day. Of course I have other foods, but I am just telling you how much I love these bars! I hope you like them too. And you can modify them however you want. That is what is so great about them! 

WAIT! I forgot to tell you about the MOST IMPORTANT part of my eating routine. First. Every single day BEFORE I take a bite of ANYTHING, I drink a full glass of Lemon Water. Fresh squeezed Lemon. There are SO many benefits to drinking Lemon water. I will save that for another time. But that is all I drink. Water. 

I hope my sister is reading this post because ALL she eats is protein. She weight lifts and does a killer awesome job grilling meat. She eats a lot of meat. Here is to you Jessica. So here is to you.

Homemade Larabars

Just this past year, my mom introduced me to Larabars...thanks to my sisters. I was hooked instantly. My Sister, Karmen featured these Bars in the magazine she works for: Girls Life. Thanks Karmen!

Hope everyone enjoys these Bars as much as I do.

Trail Mix Bars
Simple, only a few ingredients, Delish! Larabars

They can be a bit pricey. Ranging from $1-$2+ a bar.

For me, it is the perfect snack. In fact, I snack on them ALL day...it seems. 

Strawberry Banana Bars
I wanted to make my own because: #1. The cost. # 2. I couldn't find all the flavors I wanted. #3. I am now addicted and need to have them all the time...the reason I snack on them all day.

It is my dessert. I don't feel bogged down when I eat them (unlike some other desserts). It has a lot of protein, and nuts. I LOVE nuts!
