I am a fan of coleslaw. I have now found my favorite slaw. Thanks to honey and lime.
I thought...honey and lime sure go well together. Why not put it in coleslaw for the dressing? Well, pat myself on my back. Wait. Give me a minute...OK, I patted myself on my back. He he.
I did come up with this recipe by myself. I hope I can put the right amount of ingredients down for the recipe (that is always my challenge). Normally, I just throw a bunch of stuff in a bowl and taste as I go.
So I have been enjoying summer. Days at the pool. Cold water. Out early in the morning taking care of my yard/garden. Growing fresh herbs...
This is my excuse for not blogging more recipes. I am enjoying summer. Aren't you? I hope so.
I have also been making jewelry lately. It is nice to craft. Craft. Cook. Those are a few of my favorite things. AND this coleslaw.

Salt and Vinegar Potatoes
Malt Vinegar. Salt. Potatoes. Combined they taste wonderful. In fact, Malt Vinegar and Potatoes are like Peanut Butter and Jelly...they just go together. Growing up by the beach there are these fries called Thrashers Fries. They are GOOD. REALLY GOOD. There is always a line there, even in winter. And guess what they serve with those fries? Malt Vinegar. Oh num num!!!
I made these for Mother's Day Dinner. I wanted ALL things that I LOVE.
Funny I am posting a recipe about Mother's Day, when Father's Day was just yesterday...Happy Father's Day to all you Dad's!
Speaking of Father's Day. I didn't get a chance to make dinner last night for my husband, so tonight I am making him dinner for Father's Day. I am making Steak with Mushroom Gravy, Breaded Fries, Grilled Corn on the Cob, Green Beans, and Fruit Salad. Some of his favorites.
This recipe is simple. That is good because today I am tired and I have a lot to do. It is so simple, that all I really need to do it post the pictures and you could figure out the rest. But I won't leave you hanging....

Pizza with Sauteed Veggies
Now this is my kind of Pizza.
I prefer veggies on a pizza over meat. And Oh My. Oh My...When you saute the veggies, it gives it a whole new taste. Divine.
I made this one day with a friend for lunch. After the fact, she kept telling me how her mouth waters every time she thinks of this pizza. It is that good. I won't tell a lie. And I will boast if I have to. I mean, come on...This food tastes good. And food SHOULD taste good.
Pizza is actually a quick meal in our house. If there is a day that I don't know what to make for dinner. I bring out the flour etc and start making dough. Pizza Dough. You will need this pizza dough to make pizza. Don't know how to make pizza very well without the dough.
I always have mozzarella cheese in the frig. And veggies and pasta sauce. So, there you go. Things you have on hand to make pizza.
I love to get creative with my pizza. You can put just about anything on pizza. My kids love Pasta Pizza. Simply, pizza dough with cooked pasta and sauce, sprinkle cheese on top and you have pasta pizza.
I am sure I will have a few pizza recipes on here. Just a few (with sarcasm...meaning I am sure I will have a lot because I love pizza).

Mexican Salad
What do you do with leftovers from Mexican Caviar? Let me tell you...
YOU MAKE A GREEN SALAD. But first, let me tell you about my day. Pull up a chair.
Today has been a good day. Got my hair cut and colored today at Radiance Salon (Fabulous~indeed Radiant)! Now my husband can't tell me anymore "You are getting a lot of grey hairs". Well I fixed that problem.
I had a spicy Pastrami sandwich for lunch. Watermelon too.
The weather is perfect outside. I feel like "Tangled"...I want to look out my window and sing, "and brush and brush and brush my hair".
While I was getting my hair done, I was looking at cookbooks. Go figure. I brought my own magazines, well...cookbooks that is. I was plotting, planning, drooling over what to make next.
Tonight I am going to make raspberry chipotle grilled chicken drumsticks, homemade fries and some sort of veggie. Hmmmm...Mmmmm.
But on to the salad. Let me tell you...I LOVE salads. The salads on my dinner plates take up 3/4 of the plate. I load up. But better to load up on salad right?
Salads. When you make a good salad, there is no turning back. I am often asked to bring a salad to family dinners etc. Creating a new salad is a fun challenge. That is seriously all I would eat sometimes.
And Summer. What better than salads in summer. All sorts of salads. Who's with me?!
Another thing that is great about salads. They are SO easy to make! Hallelujah for that!

Mexican Caviar
Sweet. Spice. Everything Nice. That is what this Mexican Cavi"Arrrr" tastes like.
I made this for Card Club one month. Love Card Club. Love the ladies. Love having recipe exchanges. Love. Love. Love.
This recipe I actually got from my sister in law...although I added a few things. Spice. Isn't it nice? Ooooh I am really enjoying this rhyming. Let's see what else rhymes with spice, nice (twice, slice...). On and on and on I go, where will I stop...does anyone know? HA. Thanks. That was fun.
I think I am in a goofy rhyming/storytelling mood today. So maybe this recipe will tell a story. AH HA...ZU-TI-LOW, that is IT!

Tomato/Onion/Mozzarella Casserole
This was a favorite dish that I made for Mother's Day Dinner. Out of everything I made, this dish was my husband's favorite. It was even good the next day as leftovers.
Fresh Tomatoes. Fresh Mozzarella. Roasted to perfection.
What is it about some veggies that when you saute or roast them, the flavor changes and they taste delectable?! Especially onions and mushrooms. YUM.
This I know for sure: Tomatoes, Basil, Mozzarella and Balsamic Vinegar go VERY well together. Some food have a Ying and a Yang...well, for tomatoes this is IT.

Walter Egg
Walter Egg. Not sure where I got that name, my husband calls it "Walter Eggs"...So it stuck.
Basically, Egg+Bread (in window)=Walter Egg.
Need a fast dinner option? Or better yet, breakfast option? True, I think eggs are eaten more for breakfast than dinner. But none the less...Breakfast, Lunch or Dinner. It works.

I didn't always like cooking eggs. But now I do. They are rather tasty.

Who knew that there were tricks to making a perfect egg?
I didn't. Until my mom gave me some pointers about a year ago.
Eggs and Rice...2 things I could never get perfect. Simple, yet so difficult to get it just right.
Now, I am happy to say...I think I've got it!
My husband makes AMAZING eggs too, I must add. I never understood how his eggs were always so good and I struggled so much when I made eggs. Maybe, I am doing too many things at once.
Oh well, multitasking is in my nature, in my blood, in my every second of the day.
Tricks. I love knowing odd little things that make life fascinating and easier. I soak up facts faster than a sponge to water.
